Chocolate Chunk and Roasted Almond Banana Bread

  • 1 cup almond flour
  • 1/2 cup rice flour
  • 1/2 cup buckwheat, or chestnut flour
  • 3 ripe bananas, mashed plus 1 to top
  • 3/4 cup medjool dates, pitted
  • 1/2 cup almond milk
  • 2 or flax eggs eggs
  • 1/2 cup roasted almonds, chopped
  • 1/2 cup dark chocolate chunks, (optional but highly recommended)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Pinch of salt


  • Step 1

    Preheat oven to 180°C (350°F) and line a medium loaf pan with parchment paper.

  • Step 2

    In a big mixing bowl, combine the flours, cinnamon, baking soda, baking powder and salt. Using a food processor, blend together the dates and liquids until smooth. Add the bananas and eggs and stir. Pour the mixture over the dry ingredients and mix well. Add chopped almonds and chocolate chunks and combine using a wooden spoon. 

  • Step 3

    Transfer the batter into prepared loaf pan. Slice the last banana in half lengthwise and press into the top of the bread.

  • Step 4

    Bake for 55-60 minutes or until a tester inserted into the center comes out clean. Allow to cool completely before cutting into slices. Enjoy!
