Easy Lunch Bowl

"Wohoo to a new week (aka 5 days more to go to school, aka 2: 3 tests more before christmas.) yey! (this is sarcasm) At least my lunch bowl was a perfect one! Roasted vegs, broccoli, curcumber, spicy roasted chickpeas, black rice. For the chickpeas simply mix together your fave (hot) spices (e.g cayenne, turmeric, paprika powder), add to the chickpeas (preferably canned + rinsed) and stir. Put onto a lined baking sheet and bake for about 20 minutes on 200 degrees Celcius. Happy cooking!"

Cooking Time: about 20 minutes 
serves 1 
Tandoori Roasted Chickpeas


•half a can of chickpeas (garbanzo beans), rinsed
•1 heaping teaspoon Tandoori Masala
•1/2 teaspoon ground ginger
•1/2 tablespoon tahini
•juice of 1/4 a lemon


Method
Mix together lemon juice and tahini, then add the herbs and spices. Preheat the oven to 200 degrees Celcius and line a baking tray. Put the chickpeas onto it and pour the tahini mixture all over the chickpeas. Take your hands to mix the chickpeas with the mixture, make sure the most of them are covered. Put inti the oven for about 10 minutes.


Veggie Stir Fry
•about 1 & 1/2 cups of veggies of your choice, I used zucchini, broccoli and string beans
•about half a tablespoon coconut oil
•juice of 1/4 a lemon
•fresh parsley


Method
In a pan, melt the coconut oil on medium heat, then add the veggies and the parsley. Stir constantly for about 2 minutes, then cover with a lid and turn back to low heat. Let it sit for about 2 more minutes, then add it to the bowl!
Other ingredients: cooked black rice, a mini curcumber, 1/4 of a lemon

Put everything together in a bowl, give it a good stir, dig in and enjoy!
