Tofu Scramble Toast

Ingredients:
1 block of firm tofu
2-3 cloves of garlic, minced
1 onion, finely diced
3 cups of kale (or greens of your choice)
2 roma tomatoes
1/2tsp turmeric
1/2tsp paprika or chili powder
1/2tsp cumin
pinch of black pepper and sea salt (or to taste)
2-3tbs nutritional yeast (or to taste)
1/4cup non-dairy milk
Directions:
1. Drain and pat out the excess water from the tofu, and then crumble the tofu by hand into little pieces. Add the spices to the tofu.
2. Sauté onions for 2-3 minutes with water or oil, then add and sauté garlic for 2-3 minutes.
2. Add in tomatoes in and sauté until they are soft (depends on your preference)
3. Add in the crumbled tofu onto the pan, and cook until the tofu starts to brown
4. Add the non-dairy milk and cook for a few more minutes
5. Add the kale (I massaged the kale with lemon beforehand) or any greens of your choice
6. Finish off with a few sprinkles of black pepper or more salt
