ingredients

  • 1/2 chopped onion
  • 2 cloves of minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons olive oil
  • 1 teaspoon zest of lemon
  • 2 tablespoons juice lemon
  • 3 teaspoons coriander
  • 3 teaspoons cumin
  • 3 teaspoons garam masala
  • 1/2 cup plain yogurt
  • 1 teaspoon salt
  • 1 1/2 pounds (1 kilogram) cubed chicken thigh fillet

Method

  • Step 1

    Place all the ingredients in a big bowl and mix well. Marinate for several hours or overnight, covered, in the refrigerator.

  • Step 2

    Soak 10 wooden skewers in water for 30 minutes to prevent burning.

  • Step 3

    Thread 3-4 chicken cubes onto the skewer and place on a tray or shallow dish. Cook the skewers in batches on a barbeque or chargrill pan for 3-4 minutes on each side, or until golden brown and cooked.
