"Stuck for dinner ideas tonight How about this 20 minute vegan pho This was my lunch yesterday and it was so satisfying. I love how light I feel after eating pho, kinda like that feeling after sushi, just enough to keep you satisfied and not too much to make you sleepy. It's very simple, lightly fry off your veggies, I used white mushrooms, fennel, cabbage, kale stalks and onion. Then make your stock, I used brown miso, rice wine vinegar, maple syrup, cinnamon stick, star anise, garlic and ginger. Prepare your noodles. Simmer stock for 15 minutes, strain it, then add back to the pan with veggies and a final garnish of any quick cooking veggies. I used enoki mushrooms and kale leaves at the last minute. Garnish with fresh chili, loads of coriander, and a generous squeeze of lime. "
