These taste delicious with a salad or in burgers šŸ”I added grated carrots šŸ„• as Iā€™m trying to use up everything in my fridge before shopping again, but you could use grated courgette - just be sure to squeeze out any excess liquid. Chickpea flour is also called gram flour - you should be able to find it in your local Indian shopšŸ˜‰Feel free to use whatever spices you have available, itā€™s a super flexible recipe. Easy chickpea patties (makes 8) . . 1 tin chickpeas 200g carrots, grated 1 tsp onion powder or 1/2 onion, diced 2 tsp cumin 1 tsp ground coriander 1/2 tsp cinnamon 1/2 tsp chilli powder salt and pepper 3/4 cup chickpea(gram) flour 4 tbsp veg oil . . Drain chickpeas well and dry using a towel or salad spinner. Squeeze grated carrots in a clean tea towel to remove liquid. Add chickpeas and carrots to food processor with onion powder, cumin, coriander, cinnamon, chilli powder and salt and pepper. Pulse until it starts to come together. Add chickpea flour 1/4 cup at a time, pulsing after each addition (you may not need it all). When it forms a dough, scoop out and set aside in the fridge to firm up for 30 mins. Form into patties using a heaped tbsp per pattie. Heat a frying pan over a medium heat and add oil. Fry for a few minutes on each side, until golden."
