ingredients

  • 2 large white onions, thinly sliced
  • 1/2 cup orzo
  • fresh parmesan, to taste
  • 1 teaspoon lemon juice
  • large spoonful of butter
  • salt
  • black pepper
  • olive oil

Method

  • Step 1

    Sweat the onion in a big saucepan over a low heat with a little olive oil, stirring occasionally. If they start to catch/burn stir in a splash of water and continue cooking. Cook until the onions are an even golden color - this will take around an hour.

  • Step 2

    Boil a pot full of water.

  • Step 3

    Add the orzo to the onion pan, stir and cook together for 2 mins. Stir in water from the boiled kettle, little by little, adding more when the water is absorbed. Continue until the orzo is cooked through (around ten minutes). Season and taste as you go.

  • Step 4

    Turn off the heat, stir in the butter, lemon juice and parmesan. Season to taste and serve.
