Bringing you one of the best real-food recipes ever today! Braised Beef with Gnocchi and Tomatoes is totally un-fussy and made with good-for-you ingredients – so basically it’s a comfort food meets health food situation! The best kind of food situation.


Braised beef sounds super fancy, but have no fear – this is about the most simple that a recipe can get! I’ll walk you through it.

We’re going to throw everything in a pan and let it hang out in the oven for two hours. 

That’s it! Seriously. So easy. Once it’s done, we’re going to shred the beef in the pot with the beautiful saucy tomatoes. Serve in bowls of buttery soft gnocchi and top with fresh parsley and parmesan! So good. I cannot stress enough how delicious + simple this recipe is. My favorite kind of recipe – minimal effort, maximum flavor! And, it’s good-for-you comfort food! Can it get any better than that?

Besides being incredibly easy, one of the best parts of this recipe is that the ingredients can be found at your local food co-op! Shopping at your local grocery co-op is an amazing way to support local food + producers, and buy fresh, organic ingredients! I personally shop at the Willy Street Co-op and love it! The star of this recipe is the diced tomatoes – they help give the beef flavor and that beautiful saucy texture. I’m not doing a January Whole30 but I have to throw this out there for those that are – this recipe is Whole30 compliant! (Without the parmesan + gnocchi, of course.) Serve over sweet potato noodles, with a baked sweet potato or in a bowl with a side salad! So delicious no matter how you dish it up.

ingredients

  • 2 1/2 pounds beef chuck
  • 2 (14.5 ounce) cans Muir Glen Organic Diced Tomatoes
  • 3 large cloves garlic, minced
  • 1/2 medium onion, thinly sliced
  • 3/4 cup tomato juice
  • Kosher salt and black pepper to taste
  • 1/2 teaspoon dried thyme
  • 2 packages gnocchi
  • 3 tablespoons butter
  • Fresh parsley, for serving
  • Fresh parmesan, for serving

Method

  • Step 1

    Preheat oven to 325 degrees. Get out a large dutch oven.

  • Step 2

    Trim fat from the beef as best you can. Rub the beef with salt, pepper, and thyme. Set in the pan. Pour the diced tomatoes (don't drain them!) over the beef. Add the garlic and onions. Pour the tomato juice over everything.

  • Step 3

    Cover the dutch oven and cook for about 2 hours, or until a meat thermometer registers 145 to 160 degrees. Once the beef is done, shred it and stir everything together in the pot. Taste and add extra seasoning if desired.

  • Step 4

    Cook gnocchi according to package directions - drain the water, return gnocchi to the pot, and add 2-3 tbsp butter, with the heat on low, to melt butter. Stir to coat gnocchi with the melted butter.

  • Step 5

    Serve by spooning portions of gnocchi, then the beef, into bowls. Top with fresh parsley and a generous sprinkle of parmesan!

  • Step 6

    Store leftovers covered, in the fridge for up to 5 days.
