ingredients
- 15 g unsweetened cocoa powder
- 100 g unsalted butter (room temperature)
- 1 cup vegetable oil (180 ml)
- 1 cup buttermilk (180 ml)
- 300 g cream cheese (room temperature)
Method
Step 1
Preheat oven to 180 °C. Grease one baking pan with some butter and sprinkle some flour.
Step 2
In a large bowl whisk together flour, salt, baking soda and cocoa powder. Keep it aside.
Step 3
In another bowl beat the butter and the sugar together until sugar dissolves. Add the vegetable oil and the eggs one at a time. Add the white vinegar along with vanilla extract and buttermilk. Mix for 2 minutes. Start adding the dry ingredients, a bit at a time. Once everything is well incorporated add the food coloring. Put in the baking pan and bake it for 30-35 minutes.
Step 4
For the frosting, in a large bowl beat the cream cheese and heavy cream together. Add the icing sugar and vanilla extract. Beat on low speed for 1 minute than increase the speed and continue beating for 3 minutes. You can assemble together as a cake or serve it in small glasses. Either way is delicious.
