Pasta with Pistachio Pesto.

  • 200 g pistachios (unsalted)
  • 45 g (or pecorino romano)


  • Step 1

    Bring water to boil. Meanwhile prepare the pesto. In a food processor bring together pistachio. basil leaves, Grana Padano cheese and salt. Add olive oil little by little until you obtain required consistency.

  • Step 2

    Cook the pasta al dente, following the package instructions. Before draining the pasta, save one cup of pasta water.

  • Step 3

    Add this water to the pesto and add the drained pasta. Mix it together and serve. You can serve it with some burrata cheese on top. Enjoy!!!
