Grilled Zucchini Pizza

  • 500 g flour Type 00
  • 1 large grilled zucchini
  • 2 tbsp garlic infused olive oil

Method

  • Step 1

    In a large bowl mix together water and yeast, add the flour and mix with the help of a spoon. Once everything is well incorporated add the salt and mix it for a minute or 2. The dough will be sticky, but its ok. Cover it with a damp cloth for 5 minutes. After 5 minutes turn the dough out on a floured working surface and kneed the dough until you get a smooth dough. Divide into equal portions and let it rest for at least 4 hours.

  • Step 2

    Preheat oven at 482 °F (250 °C). Meanwhile in a hot grill pan, put the zucchini slices. Cook them for 5 minutes. (Approx. 2 1/2 minutes each side).

  • Step 3

    Dust some flour on a working surface and open the pizza dough into a round circle. Sprinkle the infused garlic olive oil and oregano. Place the grilled zucchinis on top and cook it for 4 minutes, or until borders start to brown. Sprinkle with some fresh basil leaves before serving. Enjoy :)
