Dragon Fruit Amaretti

"Originated from Italy this amaretti cookies are my all time favorite. They are easy to make and super delicious. You can make them plain, or play with the flavors."

  • 350 g almond flour (sifted)
  • 1 tbsp dragon fruit powder


  • Step 1

    In a large bowl whisk together almond flour, dragon fruit powder and sugar.

  • Step 2

    With the help of a hand mixer whisk egg whites and lemon juice until soft peaks are formed. Pour the meringue into the dry ingredients bowl, along with almond extract. Stir well and kneed until you get a soft and sticky dough.

  • Step 3

    Preheat oven to 302°F (150°C). Line a baking tray with parchment paper (or silicone mat). Use a small scoop to divide the dough into portions. Roll the portions into small balls and deep them in confectioners sugar. Arrange each cookie ball into the baking tray. Bake it for 20 minutes or until they crack in the surface. Enjoy :)
