Recipe

For the Rice

ingredients

  • 2 cups rice
  • 3 1/ 2 cups vegetable broth
  • 1/ 2 onion, chopped
  • 1 lime, juiced
  • 1 tablespoon garlic puree
  • 1 tablespoon coconut sugar
  • 2 teaspoons cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon adobo sauce from canned chipotle
  • 1 teaspoon pink salt
  • handful of cilantro

For the Black Beans

ingredients

  • 2 (15.5-ounce) cans black beans
  • 1/ 2 green bell pepper, chopped
  • 1/ 4 cup red wine vinegar
  • 1 tablespoon garlic puree
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika

For the Guacamole

ingredients

  • 2 ripe avocados
  • 1 lime, juiced
  • 1/ 3 cup pre made pico de gallo
  • 1 tablespoon garlic puree
  • 1 tablespoon crushed chili flakes or hot sauce
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon pink salt
  • 1/ 2 teaspoon black pepper

For the Chipotle Crema

ingredients

  • 1/ 4 cup vegan mayonnaise
  • 1 chipotle pepper in adobo
  • 1 tablespoon maple syrup
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic puree

Method

  • Step 1

    Prepare rice according to package directions. Add everything to your pot and cook until broth is soaked up and reduce heat until rice is tender. Remove from the heat and set aside.

  • Step 2

    For the black beans, add all ingredients into a medium pot over medium heat and let cook for 5 minutes on medium/low heat. Remove from heat and cover with lid to keep warm.

  • Step 3

    Mix all guacamole ingredients into a bowl and place in fridge until ready.

  • Step 4

    Add crema ingredients to blender and blend until smooth.

  • Step 5

    For serving, add the warm rice and beans to a lightly heated tortilla. Top with guacamole and chipotle crema. Enjoy!
