  • 2 slices of your favorite bread (sourdough, ciabatta, or a good hearty white bread work well)
  • 2 slices of chive and onion cheddar cheese
  • 4 slices of thick-cut smoked bacon
  • 1 large onion, thinly sliced
  • 2 tablespoons bacon jam (store-bought or homemade)
  • 2 large leaves of lettuce (Bibb, Romaine, or your choice)
  • 1 tablespoon balsamic glaze
  • Butter for toasting bread (optional)

Method

  • Step 1

    In a large skillet over medium heat, 1 tablespoon of butter. Add the thinly sliced onion and cook, stirring occasionally, until it starts to soften and turn golden brown, about 15-20 minutes. Reduce the heat to low and continue to cook, stirring frequently, until the onion is deeply caramelized, about 20-30 more minutes. Set aside.

  • Step 2

    While the onion is caramelizing, cook the bacon in another skillet over medium heat until crispy. Transfer the cooked bacon to a paper towel-lined plate to drain and cool.

  • Step 3

    Optionally, butter the bread slices lightly and toast them in a skillet until golden brown on both sides, or use a toaster to achieve your desired level of crispiness.

  • Step 4

    Spread a thin layer of bacon jam on one side of each slice of bread. Place a slice of chive & onion cheddar cheese on top of the bacon jam on each bread slice. Layer two slices of crispy bacon on top of the cheese. Add a generous portion of caramelized onion over the bacon. Place a leaf of lettuce on top of the onion. Drizzle a bit of balsamic glaze over the lettuce for a touch of sweetness and acidity.

    Top with the remaining bread slice, cheese side down, to complete the sandwich. Slice the sandwich in half if desired and serve immediately.
