Creamy Cashew and Roasted Carrot Soup

"Hi friends! Happy Monday! We've been in Vancouver for work and it was really nice to see all the beautiful fall colors, rain, and the changing of the season. It was a whirlwind of a week but we are so happy to be back home and eating home cooked food again. For meatless Monday, I made a big batch of @cannellevanille Aran's carrot and cashew soup from her new book which is so delicious and nourishing.
