I love a good falafel recipe, and this one is truly the best. Pair it with a side of fresh veggies and tzaziki sauce for dipping.

ingredients

  • 1 cup dried chickpeas
  • 1/2 small onion, roughly chopped
  • 1 cup parlsey
  • 1/4 cup dill
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons breadcrumbs
  • oil for frying

Method

  • Step 1

    Soak the chickpeas overnight or for 8 hours. Drain the chickpeas, then add them to a pot and cover them with water. Bring to a medium-low boil and cook according to the instructions on the bag (approximately 40 minutes).

  • Step 2

    Begin making the falafel when the chickpeas have been cooked, drained and cooled.

  • Step 3

    Combine all the ingredients in the food processor. Grind the ingredients to a fine, even consistency. Do not form into a mash, the texture should be granular and crumbly. If the mixture is runny, you can add more chickpeas and/or bread crumbs.

  • Step 4

    Shape the falafel with your hands, an ice cream scoop, or a falafel apparatus (used in this recipe). Form into a tight ball to keep the falafel from crumbling.

  • Step 5

    Deep fry in hot oil, removing from oil when the falafel is light brown. Let cool slightly before serving.
