Apple Skillet Pie

"For me, a wicked apple pie ought to be rustic and simple where the thinly sliced apples, the heart and soul of the pie is allowed to shine through without the distraction of spices. One of my favorites is Alice Waters' Classic Apple Tart; apples, butter and sugar baked till gloriously golden, bubbling and brushed simply with an apple glaze after baking. This recipe (shared in the comments below) draws from her much loved wisdom. I lean towards the delightful contrast of cold cream and a slice of hot pie but if custard or ice cream is your thing, it would be just as satisfying."

For the Apple Filling:

  • 5 Granny Smith apples (peeled, cored and thinly sliced)
  • 2 tablespoon unsalted butter, melted
  • 6-8 tsp sugar

For the Glaze:

  • 1 tablespoon honey

  • 1 batch pie dough

Method

  • Step 1

    Preheat your oven to 390℉ and lightly grease a skillet with butter. Set aside.

  • Step 2

    Place the pie dough between two sheets of parchment paper (at least 20" x 20") and leave to rest at room temperature for 10 minutes. The parchment sheets help you roll your dough with ease and reduces the need to add flour to your pastry board.

  • Step 3

    Roll your dough out to a 13" disk and chill in the refrigerator for 15 minutes before peeling back the top layer of the parchment sheet and easing it into the bottom of your skillet.

  • Step 4

    Gently fan out the sliced apples neatly over the dough. Lay them tightly in a concentric circle on the dough until you reach the middle. Fold in the overhanging dough towards the center and crimp it gently at regular intervals.

  • Step 5

    Brush melted butter over the dough and the apples and give the entire pie a good dusting with golden sugar. Bake for 45 minutes, rotating the skillet at 15 minute intervals to ensure even caramelization and browning.

  • Step 6

    Brush the apples with your favorite honey as it emerges hot from the oven. Slice and enjoy warm!
