ingredients
- 14 ounce can light coconut milk
- 1/4 cup plus 1 tablespoon chia seeds
- Garnish: blueberries, strawberries, thawed mixed berries, banana slices, passionfruit, coconut flakes
Method
Step 1
In a bowl, whisk together the coconut milk and chia seeds. Cover and refrigerate overnight.
Step 2
In the morning, stir the chia pudding, breaking up any clusters of seeds. Heat in the microwave for a few seconds if you like. Top with blueberries, strawberries, thawed mixed berries, banana slices, passionfruit, coconut flakes or toppings of your choice.
