"Warm berry chia breakfast pudding! To make the tie-dye looking colours I used thawed berry juice + leftover pomegranate juice from peeling a pomegranate (anyone know how to peel a pomegranate and not lose half the juice?!) + fresh passionfruit!"

ingredients

  • 14 ounce can light coconut milk
  • 1/4 cup plus 1 tablespoon chia seeds
  • Garnish: blueberries, strawberries, thawed mixed berries, banana slices, passionfruit, coconut flakes

Method

  • Step 1

    In a bowl, whisk together the coconut milk and chia seeds. Cover and refrigerate overnight.

  • Step 2

    In the morning, stir the chia pudding, breaking up any clusters of seeds. Heat in the microwave for a few seconds if you like. Top with blueberries, strawberries, thawed mixed berries, banana slices, passionfruit, coconut flakes or toppings of your choice.
