Recipe Card

ingredients

  • 1/2 cup coconut oil, or coconut butter
  • 1/2 cup cocao, /cocoa
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 cup puffed quinoa
  • 1/2 cup shredded coconut
  • 1 tablespoon bee pollen, optional
  • 1 tablespoon blue spirulina or butterfly pea powder (optional)
  • 1 tablespoon cacao nibs, optional
  • 1 tablespoon shredded coconut, optional

Method

  • Step 1

    In a medium pot over low heat: melt coconut butter or coconut oil. Add cocoa/cacao and maple syrup and stir to combine.

  • Step 2

    Remove from heat and stir in vanilla and salt. Once combined, add puffed quinoa and coconut and stir to combine.

  • Step 3

    Using a 3Tbs scoop, or just eye-balling it, use your hands to roll mixture into balls.

  • Step 4

    Toppings are optional, but if you want, pour some out onto a small plate and roll the balls in the toppings you desire. Store in fridge and enjoy!
