- 14 sun dried tomatoes, packed in oil
- 1/ 4 cup plus 2 tablespoons pine nuts, or walnuts or cashews
- 2 tablespoons nutritional yeast
- 1 clove garlic
- 1 teaspoon dried oregano
- optional: Salt, olive oil, water
- Pasta, cooked according to package directions, to serve
add the sun dried tomatoes with a bit of oil from the jar to a food processor along with the pine nuts, garlic, oregano and the nutritional yeast. Blend everything until the mixture is smooth.
Add water or more oil as needed to make the texture smoother.
Toss the pesto with the pasta to serve.
