ingredients

  • 14 sun dried tomatoes, packed in oil
  • 1/4 cup plus 2 tablespoons pine nuts, or walnuts or cashews
  • 2 tablespoons nutritional yeast
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • optional: Salt, olive oil, water
  • Pasta, cooked according to package directions, to serve

Method

  • Step 1

    add the sun dried tomatoes with a bit of oil from the jar to a food processor along with the pine nuts, garlic, oregano and the nutritional yeast. Blend everything until the mixture is smooth.

  • Step 2

    Add water or more oil as needed to make the texture smoother.

  • Step 3

    Toss the pesto with the pasta to serve.
