- 2 cups semolina flour, plus more as needed
- 3/ 4 cup hot water
Mix together in a large bowl with a wooden spoon, then with hands once dough comes together. Add flour or water as needed if dough feels too wet or too dry. Knead the dough for 10 minutes, until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.
Use a pasta machine to shape the noodles as desired. Bring a large pot of water almost to a boil. Drop in noodles and cook for 2 minutes.
Mix with mushroom bolognese to serve.
