"Ever heard of Russian brined apples It probably doesn't strike as such, but it's one of the oldest traditional Russian foods. Yellow late varieties are lacto fermented in brine, which can vary from plain water, to salt or sweet spiced brine. My version is made with honey, mint, rye and rye starter. My toddlers call these apples 'spicy' meaning they taste like sparkling water - fizzy and refreshing. "
