ingredients
- 7 ounces unsalted butter, at room temperature
- 1 egg yolk
- 1/2 teaspoon vanilla extract
- 2 teaspoon fine sea salt
- 1/2 cup powdered sugar
- 1/2 cup almond flour
- 2 1/2 cups cake flour
Method
Step 1
Using a large mixing bowl, cream the butter using a whisk or fork until light and fluffy.
Step 2
Add the egg yolk and vanilla extract, then whisk until thoroughly combined.
Step 3
In a separate large mixing bowl, sift together all the dry ingredients (cake flour, almond flour, powdered sugar, salt).
Step 4
Afterwards, gradually add the dry mixture into the butter mixture. Stir to combine. Repeat with remainder of dry mixture until a consistent dough forms.
Step 5
Next, prepare a 24” length of parchment or wax paper, transfer and center the dough onto the paper, then roll into a log, about 2” thick. Twist the ends to seal, then transfer to the fridge for at least 3 hours, or until solidified to the touch.
Step 6
When ready, preheat oven to 350°F. In the meantime, remove and unwrap log of dough and slice cross-width into 1/4” rounds. Transfer the rounds onto a lined baking sheet, placing at least 1” apart.
Step 7
When ready, bake the tray of cookies for 12-15 minutes, or until golden around the edges. Then, transfer the tray of cookies onto a cooling rack.
Step 8
When completely cooled, use a spatula to spread about 2 tsp of Nutella onto the bottom side of one cookie. Add a separate cookie on top to sandwich the Nutella. Repeat with remaining cookies.
