For the Sweet Potatoes
ingredients
- 2 medium sweet potatoes, cut into 1-inch pieces
- 3 tablespoons avocado oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne
- pinch of chili flakes
- Kosher salt, to taste
For the Chickpeas
ingredients
- 1 (14.5-ounce) can chickpeas, drained and rinsed
- 1 small onion, diced
- 1 clove garlic, minced
- 2 tablespoons avocado oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne
- pinch of chili flakes
- Kosher salt, to taste
Method
Step 1
Preheat the oven to 425°F. Cover potatoes with oil, spices and salt and toss to combine. Roast until tender, 25-30 minutes.
Step 2
While the sweet potatoes are roasting, add chickpeas to a small pot over medium heat. Add the rest of the chickpea ingredients and cook for 5-10 minutes.
Step 3
Top tortillas with the sweet potatoes and chickpeas and add guacamole, salsa, lime juice and cilantro. Enjoy!
