1 can of chickpeas drained, rinsed
1-2 tbsp avocado oil
1 clove garlic
1 small onion, diced
1 tsp smoked paprika
1/2 tsp cumin
a pinch of chili flakes & a little salt
Roasted Sweet Potatoes
2 sweet potatoes, cut into chunks
tortillas, guacamole, salsa, lime juice, cilantro
Cook chickpeas in a pot over medium heat for about 5-10 mins with avocado oil, garlic, onions & roughly 1 tsp smoked paprika, 1/2 tsp cumin, 1/4 cayenne, a pinch of chili flakes & a little salt.
Cut the sweet potatoes into 1 in chunks and season w/ the same spices. Roast at 425˚ F for about 25-30 mins. Serve in some tortillas w/ whatever toppings you like! I added guac, salsa, lime juice and cilantro.
