Spinach & Tomato Tortellini Soup

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 small onion, diced
  • 2 (14.5 ounce) cans Red Gold Diced Tomatoes
  • 3 cups vegetable broth
  • 4 cups fresh baby spinach
  • 1 (9 ounce) package cheese tortellini
  • Kosher salt and pepper, to taste
  • Grated parmesan cheese (optional), for serving


  • Step 1

    In a large pot, heat oil over medium heat. Add garlic and onion and cook for 1 minute.

  • Step 2

    Stir in tomatoes and vegetable broth and bring to a boil. Reduce heat to low and add spinach and tortellini. Cover and cook for about 5-6 minutes, just until tortellini are tender.

  • Step 3

    Season with salt and pepper to taste. Serve immediately with parmesan cheese if desired.
