ingredients

  • 1 cup gluten free oat four
  • 5 cups almond flour
  • 7 cups buckwheat flour
  • 2 tablespoons cacao powder
  • 1 teaspoon baking powder
  • 3 teaspoons baking soda
  • 3 large mandarin oranges, juiced
  • 1 cup unsweetened almond milk
  • 4 cups olive oil
  • 1 banana
  • 2 medjool dates
  • cacao nibs

Method

  • Step 1

    Preheat your oven to 180º. In your food processor add almond milk, banana, olive oil and dates and combine until mix.

  • Step 2

    In other bowl add flour, baking powder, baking soda and cacao.

  • Step 3

    Add the wet mixture to the dry mixture, add cacao nibs. Then divide batter between muffin tins.

  • Step 4

    Bake for 20-25 min. Remove the muffins from the oven and allow them to cool down.
