"Been cooking a lot more lately and now, using lots of different yummy veggies and @annieshomegrown organic Asian sesame dressing, I’ve created a chicken pasta salad and the recipe can be found @thefeedfeed! I love all of Annie’s snacks, especially their bunny grahams and their plant-based Asian sesame dressing is just as amazing. It’s a bit sweet and tangy and brings a lot of flavor to the salad. My family enjoyed it so much, we went through half the bottle in just one meal! ingredients

  • Kosher salt
  • 1 cup pasta
  • 1 tablespoon garlic salt
  • 1 boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1/2 cup beets, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach, packed
  • 1 cup arugula, packed
  • 1/2 cups cucumber, diced
  • 1/4 cup red onions, thinly sliced
  • 1/2 avocado, pitted and thinly sliced
  • 3/4 cup Annie's Organic Sesame Ginger Dressing

Method

  • Step 1

    In a pot of salted boiling water, cook pasta according to package directions. Drain and transfer to a large bowl.

  • Step 2

    Season chicken breasts with garlic salt. In a non-stick pan over medium heat, heat oil. Cook chicken until golden and cooked through, 6-8 minutes per side. Let rest for 5 minutes, then cut into smaller strips.

  • Step 3

    In the large bowl with the pasta, toss together all remaining ingredients. Pour dressing over salad, toss to combine.

  • Step 4

    Season to taste with more salt, if necessary, and serve
