For the Scones

ingredients

  • 2 1/2 cups flour
  • 1/3 cup plus 2 tablespoons sugar
  • 1/3 cup rainbow sprinkles
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup butter, cold and cut into cubes
  • 1/4 cup plus 2 tablespoons heavy cream
  • 1/4 cup plus 1 tablespoon milk
  • 2 teaspoons vanilla extract

For the Glaze

ingredients

  • 2 tablespoons milk
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method

  • Step 1

    Preheat the oven to 375ºF. In a medium bowl, combine dry ingredients.  Cut in cold butter until dough resembles fine crumbs.  Add cream, milk and vanilla.  Stir/use your hand until dough comes together.  Transfer dough to a lightly floured surface.  Shape into an 8x8 inch circle, 1 ½ inch thickness.  Cut into 8 equal sized scones.  Bake at 375 for 25 minutes until tops are golden.

  • Step 2

    While scones are baking, make the icing. Using a whisk combine all ingredients until smooth.

  • Step 3

    Once scones are done baking, let cool for 5 minutes.  After 5 minutes of cool time, dip each scone in icing, then add more sprinkles if desired.
