This recipe brings two of the most classic treats together, s'mores and chocolate chip cookies. We used homemade cookie dough, but if you’re aiming to save time and make a quick dessert, use your favorite store-bought dough!

ingredients

  • 12 tbsp unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/4 cups all purpose flour
  • 1 1/2 cups semisweet chocolate chips
  • 6 graham crackers, broken in half
  • 12 marshmallows
  • 1 chocolate bar, broken up into 12 pieces

Method

  • Step 1

    In the bowl of a stand mixer fitted with a paddle attachment (a hand mixer works as well) cream the butter and sugars until light and fluffy.

  • Step 2

    Add the vanilla and eggs and mix to combine.

  • Step 3

    Add the baking soda, salt, and flour and mix everything until just combined and a dough forms.

  • Step 4

    Pour in chocolate chips and mix.

  • Step 5

    Line two cookie sheets with parchment paper.

  • Step 6

    Lay down half of a graham cracker, a square of chocolate, and a marshmallow (6 per tray). Add a large scoop of cookie dough on top of each s'more.

  • Step 7

    Use your hands to press the cookie dough down slightly to cover the s'more.

  • Step 8

    Chill in the freezer to set for about 30 minutes.

  • Step 9

    Preheat your oven to 325 degrees Fahrenheit.

  • Step 10

    After chilling, bake the cookies in the preheated oven for 15-18 minutes or until golden brown on the edges. Enjoy!
