ingredients
- 12 tablespoons unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/4 cups all purpose flour
- 1 cup chocolate chips
- 2 graham crackers, crushed
- 1 chocolate bar, broken into squares
- 1 1/2 cups mini marshmallows
- 3 graham crackers, broken into small pieces
Method
Step 1
Preheat your oven to 325 degrees Fahrenheit.
Step 2
In the bowl of a stand mixer fitted with a paddle attachment (a hand mixer works as well) cream the butter and sugars until light and fluffy.
Step 3
Add the vanilla and eggs and mix to combine.
Step 4
Add the baking soda, salt, and flour and mix everything until just combined and a dough forms.
Step 5
Pour in the crushed graham crackers and chocolate chips and mix to incorporate.
Step 6
Scoop the cookie dough onto baking sheets lined with parchment paper.
Step 7
Bake the cookies for 15 minutes or until they are golden brown on the edges.
Step 8
Immediately after the cookies come out of the oven, press the graham cracker pieces and chocolate squares onto each cookie.
Step 9
Sprinkle your desired amount of mini marshmallows on top of each cookie.
Step 10
Use a torch to toast the marshmallows on the cookie tops. Alternatively, if you don't have a torch you can put the trays back into the oven and broil for 2-3 minutes or until the marshmallows are golden brown.
Step 11
Once the cookies are cool, serve and enjoy!
