Apples and Honey Galette

Galettes are an easy yet impressive dessert to bake. Sweetened entirely with Local Hive honey, this apple galette is a great recipe to make this season. The pairing of apples and honey in this galette makes it especially perfect for a Rosh Hashanah dessert.

ingredients
Crust
- 1 1/2 cups all purpose flour
- 1 tbsp Local Hive Honey
- 3/4 tsp salt
- 10 tbsp cold unsalted butter, cut into small cubes
- 4 tbsp ice water
ingredients
Apple Filling
- 1 1/2 lbs apples, I used Gala apples but any variation works for this recipe
- 3 tbsp Local Hive Honey
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp ground cloves
- generous pinch salt
- Zest and juice of 1/2 a lemon
- 2 tsp cornstarch
- 1 egg, for egg wash
Method
Preperation
Step 1
To a large bowl add the all purpose flour.
Step 2
Use the bottom of a tablespoon to make an indent in your flour. Use the tablespoon indent to measure the honey without it sticking to the measuring spoon.
Step 3
Add salt and the cold, cubed butter.
Step 4
Rub the butter into the flour between your fingers to bring the dough together.
Step 5
Add cold water, one tablespoon at a time. Use only as much water you need to bring the dough together.
Step 6
Transfer dough to plastic wrap and chill in the fridge for an hour or until ready to use, or in the freezer for 30 minutes.
Step 7
Slice all of your apples and transfer them to a large sauce pot.
Step 8
Add honey (you can add more than listed if you'd like a sweeter galette), spices, salt, and lemon zest.
Step 9
In a small bowl add the juice of the lemon and cornstarch to make a slurry. Set aside.
Step 10
Cook the apples over medium heat to release some of their liquid.
Step 11
Once their is a good amount of liquid bubbling under the apples, add the cornstarch slurry to thicken the juices. Once the juices have thickened, transfer filling to a bowl off the heat and set aside.
Assembly
Step 1
Preheat your oven to 350 degrees Fahrenheit.
Step 2
Flour a clean large surface. Roll out your chilled dough into a large round, about 12 inches wide.
Step 3
Transfer the round crust to a parchment lined sheet tray.
Step 4
Add your apple filling to the middle of the crust, leaving about 3 inches of crust plain on the edges.
Step 5
Fold over the edges of the crust to seal in the filling.
Step 6
Whisk up the egg for egg wash and brush onto the crust.
Step 7
Bake the galette for about 30 minutes or until golden brown all over.
Step 8
Serve with vanilla ice cream and a drizzle of Local Hive Honey. Enjoy!
