ingredients
- 1 can (10 oz) Tomato Love Mild Diced Tomatoes + Green Chilies
- 1 can (10 oz) Red Gold Canned Crushed Tomatoes
- 2 tablespoon olive oil
- 5 hot Italian sausages links, removed from casings
- 1/2 white onion, chopped
- 1/2 red bell pepper, seeded and roughly chopped
- 4 garlic cloves, minced
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 1/4 cup dry white wine
- 1 cup chicken stock
- 2 cups water
- 1/4 cup heavy cream
- 2 cups dried penne pasta
- 1/4 cup parmesan cheese, grated
- Fresh Basil, to taste.
- Kosher Salt, to taste.
- Black Pepper, to taste.
Method
Step 1
Heat oil in a large skillet over medium high heat. Add sausage and cook until browned and cooked through, 8-10 minutes. Add onion, red bell pepper and minced garlic.
Step 2
Once veggies soften, about 5 minutes. Season generously with salt and pepper, followed by basil and oregano. Once fragrant, add white wine to deglaze the pan using a wooden spoon to scrape up any browned bits.
Step 3
Add cans of diced tomatoes, crushed tomatoes, chicken stock, water and heavy cream. Stir well. Add in uncooked pasta.
Step 4
Bring liquid to a boil, reduce heat to medium low, and cover. Simmer and stir occasionally for about 15 minutes.
Step 5
Once pasta is cooked through, adjust seasonings to taste. Stir in parmesan and basil. Then let rest for 5-7 mins.
Step 6
Serve hot and top with extra parmesan and basil.
