"CASHEW CRACK COOKIES. Ok yes I’m a hyperbolic person BUT I SWEAR TGOD THESE ARE THE BEST COOKIES I HAVE EVER MADE. When my roommate first tasted them, she asked me “is there crack in here?” Not this batch, but I guarantee these cookies are the most fun you can have while sober. They’re shockingly grain-free, if you’re into that kinda thang. But trust me, they don’t taste like it. Ok enough blabbing, just go make these already, k?"

ingredients

  • 3/4 cup cashew butter
  • 1 tablespoon ghee or butter, at room temperature
  • 1/4 cup brown sugar or coconut sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoon coconut flour
  • 1/2 teaspoon baking soda
  • Pinch of salt
  • Handful of chocolate chunks or chocolate chips

Method

  • Step 1

    Preheat the oven to 350℉. Line a cookie sheet with parchment paper.

  • Step 2

    In a large bowl, mix together the cashew butter, ghee, and sugar. Add in the egg and vanilla extract. Mix until well combined. Fold in the coconut flour, baking soda and salt until a dough forms. Mix in chocolate chunks.

  • Step 3

    Scoop tablespoonfuls of dough onto the prepared baking sheet. Bake cookies for 6-8 minutes. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack and cool completely.
