Chicken & Broccoli Tofu Stir-fry Noodles

"RECIPE:
Ingredients:
1 lb chicken breast, diced
1 small broccoli, cooked
1 package tofu shirataki noodles (or noodles of choice like rice noodles, soba noodles, egg noodles etc)
1 tablespoon sesame seeds
• scallions, to garnish
• black sesame seeds and crushed red pepper, to garnish (optional)
• 1 tbs olive oil
• 1 teaspoon cornstarch
For the marinade :
• 1/4 cup soy sauce
• 2 tbs mirin
• 3 garlic cloves, crushed
• 1 inch fresh ginger, grated
• juice of half lime
• 1 tbs sesame oil
• 1 tbs honey or maple syrup
Mix all the ingredients of the marinade, add the chicken and let it sit for 30 mins.
Heat the olive oil and add the chicken, without the marinade. Cook until browned. Add the broccoli, sesame seeds.
Mix 1 teaspoon of cornstarch with the left of marinade add to the wok. Let it thicken a little then mix in the noodles. I used tofu noodles. Just rinse it with some warm water. It's low in carbs and calories.
1 serving has only 10 calories.
If you use other kind of noodles, cook as instructed before adding it to the stir-fry.
Garnish with scallions, black sesame seeds and crushed red pepper.
