Coconut Rice Pudding With Berries And Pomegranate

Ingredients:

1/2 cup uncooked rice

1 1/2 cups coconut milk

1/2 cup water

1 tbsp sweetener of choice

Toppings:

Pomegranate

Cherries

Raspberries

Directions:

In a heavy-bottomed pan, whisk together coconut milk and water and sweetener over medium-high heat until everything is well combined. To this add white rice. Now continue to cook the mixture, stirring until it thickens and the rice gets soft. If the pudding gets too thick, stir in more coconut milk, check for taste and add more sweetener or spices as needed.

Remove from heat and top with desired toppings.
