Apple Rose Cake

 

Ingredients

 

  • 300 gr (2 cups + 2 tbsp) cake flour
  • 200 gr (1 cup) sugar
  • 100 gr (1/2 cup) melted butter
  • 3 eggs
  • Zest of a lemon
  • Pinch of ground cinnamon
  • 2 gr (1/2 tsp) baking powder
  • 1 apple (skin peeled and chopped)
  • 50 gr pecan

 

For the apple roses:

 

  • 2 Granny Smith apples
  • 400 ml (3/4 + 1/4 cup) water
  • 200 gr (1 cup) sugar

 

 

Directions

 

  1. Melt the butter and set aside to cool.
  2. Grease a 9 inch springform and place baking sheet .
  3. Preheat oven to 350 F (180 C).
  4. Start off with the apple roses. Cut 2 granny smith apples in halves. Cut paper thin slices.
  5. Pour water and sugar in a midsize cooking pan. Bring to boil on medium heat. Set to low heat and add apples.
  6. Cook until the apples are slightly tender, enough to bend. (2 minutes approx. –Do not overcook or apples will break into pieces.-)
  7. Drain the apples and pat dry with paper towel.
  8. Place apple slices in a row, each one on top of the other. Starting from one end, carefully roll the apple to the other end. You’ll have formed a rose.
  9. Set roses aside, while you begin preparing the cake batter.
  10. Whisk eggs and sugar on high speed for a few minutes until pale and thick.
  11. Add melted butter very slowly while still whisking.
  12. Add baking powder, flour, cinnamon, chopped apples and pecans and mix just until combined.
  13. Pour batter on springform pan and spread. Place apple roseson the batter. - Do not press into the batter, just lightly place. The cake will rise and reach the same level with the roses. –
  14. Bake for 35 minutes until golden. Stick a toothpick in the middle. If dry, you’re done.
  15. Serve while warm.
