Lemon Muffins with Citrus Glaze

"Sicilian lemon drizzle muffins you say... yes please, the perfect thing to brighten up this dreary day. As the name suggests, this muffin recipe calls for Sicilian lemon, this isn't crucial but I really recommend. Sicilian lemon has a lighter floral lemon scent and taste, giving these lemon drizzles something a little different to the average. Cream together the butter and sugar until light and fluffy. Now add the eggs and flour and beat only until combined. Finally mix in the zest and lemon extract. Split between 6 lined large muffin tins and bake at 180 degrees Celsius for 15-20 minutes. They should be golden and spring back to a light touch. In the last 5 minutes of baking mix together 1tbsp of sugar and the juice of the lemon, it will stay grainy but that's ok. Pour this evenly over the 6 muffins as soon as they are removed from the oven. Allow this to soak in for 5 minutes before removing he muffins from the tin and cooling completely. Finally make a simple water icing using lemon juice in place of water. Use the ratio 2:1 icing sugar to juice. Drizzle over your cooked muffins and enjoy..."

Lemon Syrup

  • 1 tablespoon sugar
  • 1 lemon, juice and zest

Citrus glaze

ingredients

  • 1/2 cup powdered sugar
  • 1/4 cup fresh lemon juice

Method

  • Step 1

    Preheat oven to 350˚F and line a 6 cup muffin tin with baking liners.

  • Step 2

    Cream together the butter and sugar until light and fluffy. Now add the eggs and flour and beat only until combined. Finally mix in the zest and lemon extract. Split between 6 lined large muffin tins and bake for 15-20 minutes. They should be golden and spring back to a light touch.

  • Step 3

    In the last 5 minutes of baking mix together sugar and the juice of the lemon for the syrup, it will stay grainy but that's ok. Pour this evenly over the 6 muffins as soon as they are removed from the oven. Allow this to soak in for 5 minutes before removing he muffins from the tin and cooling completely.

  • Step 4

    Once cool make the glaze by combining the powdered sugar and the lemon juice. Pour over the muffins and enjoy.
