ingredients

  • 1/2 yellow onion, small dice
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 box Annie's White Cheddar Cheesy Rice
  • 2 1/2 cups water
  • 1 cup cauliflower rice
  • 2 chicken breasts, cooked and diced
  • 1 cup frozen corn
  • 1/2 cup snap peas, chopped
  • Grated parmesan, to taste

Method

  • Step 1

    Sauté ½ cup of chopped yellow onion in a heavy stockpot with 1 TBSP of olive oil until soft and translucent

  • Step 2

    Add 2 TBSP butter and rice from package and toast for 2 minutes.


  • Step 3

    Add 2.5 cups of water and seasoning packet and stir until dissolved.

  • Step 4

    Bring to a boil, then turn down to a simmer. Set kitchen timer for 10 minutes

  • Step 5

    Add 1 cup of cauliflower rice , stirring often.

  • Step 6

    When timer beeps, add 1 cup cooked & diced chicken, stir to combine with rice.

  • Step 7

    Add 1 cup frozen corn, stir into rice and chicken. Cook for 3-5 minutes, until corn is hot. Add chopped snap peas and parmesan, serve immediately
