Tofu in Soy and Honey Marinade

ingredients

  • 250 gram tofu
  • 1 tablespoon fresh ginger
  • 1 clove garlic
  • 1 red pepper
  • 40 milliliter soy sauce
  • 400 grams spring beans
  • 150 milliliter coconut milk
  • 170 grams rice
  • 10 grams sesame seeds
  • 3 tablespoons honey

Method

  • Step 1

    Dry the tofu with kitchen towel. Peel and grate the ginger. Finely chop the garlic. Remove the seeds from the pepper and cut finely.

  • Step 2

    In a bowl mix the soy sauce, honey, ginger, half of the red pepper and half of the garlic. Dice the tofu. Optionally you can pinch some holes in the tofu with a fork, this way the tofu will soak up the marinade better. Put the tofu in the marinade for at least 10 minutes.

  • Step 3

    Remove the ends of the beans and cut them in half. Heat 1 tablespoon of olive oil in a frying pan, add the remaining garlic and remaining red pepper and the green beans. Bake for 10-15 minutes, stir occasionally.

  • Step 4

    In the meantime; bring 250ml water and the coconut milk to a boil and cook the rice in a pan with a lid. Cook the rice in 12-15 minutes (covered), let it steam off without the lid afterwards. Heat the sesame seeds in a frying pan without oil until they start coloring. Set aside.

  • Step 5

    Heat some olive oil in a frying pan and bake the tofu with the marinade on low to medium fire for about 4 minutes per side. Stir occasionally. Divide the rice over two plates or bowls. Serve with the green beans and tofu and garnish with the sesame seeds.
