Combine coconut milk, water, lemon zest, vanilla and salt in a medium saucepan. Using a whisk, continuously stir in the semolina until thickened.
Sweeten if you like. Remove from the heat and pour into a bowl. Enjoy with warm raspberries, crunchy granola or your favorite toppings
To make warm raspberries, heat fresh raspberries in a small pot over medium-low heat for 3-5 minutes.
