ingredients
- 1/2 pound ground beef
- 1 (10 ounce) can Red Gold Mild Diced Tomatoes + Green Chilies, drained
- 2 tablespoons Red Gold Tomato Paste
- 1 tablespoon taco seasoning
- 2 refrigerated pie crusts
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 1 large egg, beaten for egg wash
Method
Step 1
In a skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it up as it cooks.
Step 2
Stir in the taco seasoning, Red Gold Diced Tomatoes + Green Chilies, and Red Gold Tomato Paste until well combined. Let the mixture cook for another 2-3 minutes, then remove from heat.
Step 3
Roll out the refrigerated pie crusts and cut them into small circles (about 4-5 inches in diameter).
Step 4
Place 1 tablespoon of the beef mixture onto each dough round, then top with shredded cheese. Fold the dough over and pinch the edges shut using a fork to seal.

Place the empanadas on a lined baking sheet and brush the tops with egg wash for a golden finish.
