Mini pancakes

Ingredients

1 cup (150g) plain/all-purpose wheat flour
1 tablespoon baking powder
¼ teaspoon salt
1 cup (250 ml) almond milk
2 tablespoons melted coconut oil
2 tablespoons maple syrup or another sweetener
1 teaspoon pure vanilla extract
More oil to grease your pan/skillet, if necessary

Toppings:
Pink and white dragonfruit
2-3 figs
Vegan cream cheese
Berry jam
Sugar balls
Blueberries
Frozen raspberries
Nectarine slices

Method

Combine the flour, baking powder and salt in a bowl. In another bowl, combine the almond milk, coconut oil, maple syrup and vanilla extract. Mix well. Combine the two bowls and mix until uniform.

Place a large pan on the heat. Add a bit of coconut oil. Use a large spoon to spoon the batter onto the pan, creating little round pancakes. Cook for 2-3 minutes on one side, then flip and do the other side. Arrange toppings on top of the pancakes. Enjoy!
