"VEGAN PURPLE OMBRE PANCAKES to brighten up your day ๐Ÿ’œ. . We are trying to make the most of these quarantine days, because otherwise we would go crazy ๐Ÿ™ˆ. Spring is definitely here and it's super warm so, we started eating dinner on the balcony and it's so nice to be outside, in the sun โ˜€๏ธ. Getting some sunshine helped me a little bit with my breathing problems and also a few tips I got from you guys (thank you ๐Ÿค—). I will soon share the little steps I took every day to deal with my anxiety ๐Ÿ˜Š. I hope you guys are fine and healthy!"

ingredients

  • 1 1/2 cups flour
  • 1 1/2 tablespoons baking powder
  • 3 tablespoons sweetener of choice
  • 1 1/2 cups plantbased milk of choice
  • 1 1/2 tablespoons apple cider vinegar
  • Pink pitaya powder
  • Blue spirulina powder

Method

  • Step 1

    In a small bowl mix together milk and vinegar. Let the milk sit for 5 minutes, it will become some sort of a vegan buttermilk. In a large bowl mix flour, baking powder and sweetener. Add in the liquid mixture and mix well. Heat up a non stick pan and start cooking your pancakes. Let the first 2 plain, then start adding pink pitaya and blue spirulina powder to the batter (I added 1/2 tsp pink pitaya powder and 1/4 tsp blue spirulina powder after each 2 pancakes to achieve the ombre effect).
