We are trying to make the most of these quarantine days, because otherwise we would go crazy ๐. Spring is definitely here and it's super warm so, we started eating dinner on the balcony and it's so nice to be outside, in the sun โ๏ธ. Getting some sunshine helped me a little bit with my breathing problems and also a few tips I got from you guys (thank you ๐ค). I will soon share the little steps I took every day to deal with my anxiety ๐. I hope you guys are fine and healthy!"

ingredients
- 1 1/2 cups flour
- 1 1/2 tablespoons baking powder
- 3 tablespoons sweetener of choice
- 1 1/2 cups plantbased milk of choice
- 1 1/2 tablespoons apple cider vinegar
- Pink pitaya powder
- Blue spirulina powder
Method
Step 1
In a small bowl mix together milk and vinegar. Let the milk sit for 5 minutes, it will become some sort of a vegan buttermilk. In a large bowl mix flour, baking powder and sweetener. Add in the liquid mixture and mix well. Heat up a non stick pan and start cooking your pancakes. Let the first 2 plain, then start adding pink pitaya and blue spirulina powder to the batter (I added 1/2 tsp pink pitaya powder and 1/4 tsp blue spirulina powder after each 2 pancakes to achieve the ombre effect).
