Zucchini Noodle Egg Nests

Ingredients:
Zucchini noodles, about one cup for each 'nest'
grass fed ghee, as needed
Eggs, one for each 'nest"
salt, pepper, red chili flakes, black sesame seeds, to taste
fresh dill and cilantro, to taste
Directions
Heat ghee in large saute pan and add noodles. Season with salt and pepper. Cook until noodles start to loose their excess moisture.
Meanwhile, poach your eggs. Watch this helpful video on how to poach an egg.
Add noodles to a plate in 'nests' then top with poached eggs. Season to your liking with salt, pepper, red pepper flakes and black sesame seeds. Top with fresh herbs and serve.
