Avocado Sweet Potato "Toast" with Tomatoes and Smoked Salmon

  • 1 sweet potato, cut in half (lengthwise)
  • 2 tablespoon avocado oil
  • 1 avocado, sliced
  • 3 slices smoked salmon
  • 3 blistered tomatoes
  • Microgreens
  • Sprinkle of sesame seeds
  • Salt and pepper, to taste


  • Step 1

    Preheat the oven to 425℉ and line a small pan with parchment paper.

  • Step 2

    Place the sweet potato onto the pan and drizzle with oil. Cook for 25 minutes, flipping the sweet potatoes halfway through cooking.

  • Step 3

    Once the sweet potatoes are cooked, top them with sliced avocado, smoked salmon, blistered tomatoes, and micro greens. Sprinkle with sesame seeds, salt and pepper.
