ingredients

  • 1 golden beet, spiralized
  • 1 small zucchini, spiralized
  • 2 tablespoons olive oil
  • 2 eggs
  • Red pepper flakes, to taste
  • Hot sauce, to taste

Method

  • Step 1

    Heat the olive oil in a skillet on low-medium heat. Shape the beet and zucchini into 2 nests in the pan, then crack an egg into each. Cook until the whites are set. Season with red pepper flakes and hot sauce.
