- Oil, for frying
- 8 Cumberland sausages
- 2 large red onions, finely sliced
- 5 cavolo nero leaves, tough stems removed, finely sliced
- 2 tablespoons all-purpose flour
- 550 ml chicken stock
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 3 sprigs of fresh thyme leaves
- 350 grams frozen mashed potatoes (or homemade, if preferred)
- 1 sheet of puff pastry
- 1 large egg, beaten
Method
Step 1
Heat a drizzle of oil in a large, non-stick pan. Add the sausages and fry for about 7 minutes, until browned. Remove from the pan and set aside (they won’t be fully cooked yet).
Step 2
In the same pan, add a little more oil and the sliced red onions. Fry over medium heat for 5 minutes, stirring often, until softened. Add the cavolo nero and cook for another 5 minutes, until the vegetables are tender.
Step 3
Stir in the flour and cook for a minute, ensuring it’s well combined. Gradually pour in the chicken stock, a little at a time, stirring continuously and allowing it to thicken before adding more. Once all the stock is incorporated, season with salt and pepper, then add the honey, Dijon mustard, and thyme leaves.
Step 4
Slice each sausage into 6 pieces and return them to the pan, stirring to combine with the gravy and vegetables.
Step 5
Pour the sausage and gravy mixture into a 30 x 20 cm ovenproof pie dish.
Step 6
Microwave the frozen mashed potatoes according to package instructions. Season and stir well. Use an ice cream scoop to form 5–6 equal portions, placing them evenly over the sausage mixture in the dish.
Step 7
Preheat the oven to 375°F (fan). Cut star shapes or squares from the puff pastry and layer them over the filling, slightly overlapping to cover evenly. Brush with beaten egg.
Step 8
Place the pie in the oven and bake for 25 minutes, or until the pastry is golden and crisp.
