Lemonade Ice Pops

"When life gives you lemons, make lemonade ice pops This was my favourite flavour in my childhood and it still is. Making these ice pops is RIDICULOUSLY simple. First you need to buy the ice pops mould (very cheap from online). Pretend you’re making lemonade and just pour your lemonade in the moulds. Freeze for few hours or overnight. Note: The lemonade “store bought” ice lollies are yellower because they sadly have yellow food colouring added to them. I am a very open minded person, but not when it comes to artificial food colouring. Ingredients (3 lemonade cups) 1/4 cup coconut sugar or honey (or your favourite natural sweetener) 1/2 cup water 1/2 cup freshly squeezed lemon juice (from approximately 3 lemons) 2 cups cold water Fresh mint leaves (optional) Method Boil the ½ cup of water and the sugar in a small saucepan, stirring frequently. When boiled, remove from heat add the lemon juice, mint and remaining water. Place in the fridge for 2-3 hours to chill."
