ingredients
- 1 ounce Baileys Irish Cream
- 1 shot espresso
- 1 ounce dark rum
- 1/2 ounce white rum
- 3 tablespoons cream cheese
- 3/4 ounce heavy cream
- 2 tablespoons icing sugar
- 1 tablespoon vanilla extract
- 1 cup ice
Method
Step 1
In a cocktail shaker, combine Baileys, rum, espresso and ice. Shake until chilled (about 30 seconds).
Step 2
Strain into champagne flutes.
Step 3
Beat the cream cheese and heavy cream until soft peaks form. Fold in sugar and vanilla extract and transfer into a piping bag.
Step 4
Top drinks with frosting and garnish as desired to serve.
