ingredients
- 1/8 cup almond flour
- 3 eggs
- 4 tablespoons granulated sugar
- 1/3 cup white flour
- 1/2 cup sliced almonds, for topping
Method
Step 1
Preheat the oven to 355°F.
Step 2
Separate 3 large eggs from whites and egg yolks and place them in separate bowls.
Step 3
Add 4 Tablespoons of sugar to the yolks and beat with a mixer on high speed until fluffy.
Step 4
Sift 1/2 cup almond flour to the egg yolks and sugar and mix . Give a good mix. Add 1/3 cup white flour to the same bowl and mix again until it forms into batter.
Step 5
Beat egg whites on high speed until the mixture is light and fluffy (about 5 minutes).
Step 6
Add the beaten egg whites to the batter bowl and mix carefully. The batter must be somewhat liquid but not too runny.
Step 7
Spoon the batter onto a cookie tray lined with parchment paper. Leave space between each cookie. Sprinkle with almond slices.
Step 8
Bake for 15-25 minutes at 355°F. For softer cookies, take them out at 15 minutes. The longer you bake, the crunchier they become.
